Combine ground chicken, fresh spinach, onion, garlic, shredded white cheddar, egg, breadcrumbs, salt, and black pepper in a large mixing bowl. Gently mix until all ingredients are thoroughly incorporated, being careful not to overwork the mixture.

Divide the chicken mixture into four equal portions and shape each into a uniform patty. Place patties on a plate and refrigerate for 15–20 minutes to help them hold their shape, if desired.

Heat a large nonstick skillet or grill over medium heat. Cook each patty for 5 to 6 minutes per side, or until the center reaches 165°F and the cheese is melted throughout.

Lightly toast the burger buns in a skillet or toaster until golden brown.

Layer each toasted bun with lettuce, sliced tomato, a cooked chicken patty, and additional white cheddar or sauce as preferred. Serve immediately.
