Preheat oven to 350°F (325°F for dark or nonstick pans). In a large mixing bowl, combine strawberry cake mix, vegetable oil, vanilla extract, and eggs. Stir thoroughly with a spoon until a uniform dough forms.

Cover the bowl and refrigerate dough for 15 to 30 minutes to firm up.

Using clean hands, shape the chilled dough into 1-inch diameter balls.

Place dough balls about 2 inches apart on ungreased baking sheets.

Transfer baking sheets to the preheated oven and bake for 9 to 12 minutes, or until the tops appear set and the bottoms just begin to turn golden.

Remove from the oven and cool cookies on baking sheets for 1 minute. Transfer to wire racks and let cool completely for about 30 minutes.

Once cooled, drizzle melted chocolate over one side of the cookies or dip cookies partially in melted chocolate, according to preference. Add sprinkles for decoration if desired.
