# Step-by-Step Guide:

01 - Dice zucchini, yellow squash, red bell pepper, and orange bell pepper into 1/2-inch pieces. Halve cherry tomatoes. Thinly slice red onion and mince garlic. Chop basil and parsley.
02 - Heat olive oil in a large skillet over medium heat. Add red onion and sauté for 3 to 4 minutes until softened. Add garlic and cook for 1 minute. Add red and orange bell peppers and cook for 5 to 7 minutes until starting to soften. Add zucchini and yellow squash and sauté for 5 to 7 minutes until tender-crisp. Stir in cherry tomatoes and cook for 2 to 3 minutes until slightly softened. Season with salt, pepper, oregano, and red pepper flakes if using.
03 - Cook tortellini according to package instructions in a separate pot. Drain well and add to the skillet with sautéed vegetables. Toss gently to combine.
